If you are not familiar with soul food, I am guessing you are not from around here. Generational recipes that are handed down and treasured are the hallmark of this style of cookery. Is it healthy? Oh hell no! Is it delightful? It is heaven for the southern soul! A lot of people, including southerners, don’t realize that this traditional African American cookery had very humble beginnings in the shameful time of slavery. The mastery of transforming simple cheap ingredients into a tasty mouthful is true artistry and a celebration of creativity. Martha Lou’s kitchen is as close to authentic southern cuisine as one can get in Charleston. Yes, they have received hype from the Food Network but it hasn’t changed their welcome home vibe and the down to earth food. If you aren’t familiar, go with an open mind. If you are familiar, you know you are in for some special tastes!
I had the fried chicken, cabbage, lima beans and macaroni and cheese. Yes, a cheat day! The chicken was freshly cooked to order and came out so piping hot that I could feel it on my face! I started with my sides to let the chicken cool down. The macaroni and cheese was perfection! I love hot sauce on my limas and they have it ready for you on your table. Creamy, soft and flavorful! Cabbage, I am actually writing about cabbage! I don’t know what magic they use but that cabbage is exactly what I crave. I like it country style and cooked to a delicate soft texture. I think I detected tomato juice or something similar. I may try that the next time I make cabbage at home! I ate most of my sides and the chicken was still piping hot but I couldn’t wait any longer. Perfectly crispy, perfectly seasoned and perfectly juicy! I don’t know how the staff stays so thin with this food around! I would be hard pressed to fit through the door if I worked there!
