SORGHUM AND SALT
186 COMING STREET, CHARLESTON, S.C. 29403
Butter beans. That humble little bean most of us spent our childhood trying to avoid has been reborn a star! At the hands of Chef Tres Jackson, they evolve into a dish you will crave for the rest of your life. Topped with cured egg yolk, roasted garlic, ricotta and parsley, his butter beans are simply heavenly.
Lavender roasted beets, with blackberry, coffee and olive dirt. It’s wizardly crazy but it magically works!
Locally forged Chanterelle mushrooms served with cabbage soubise (traditionally a béchamel sauce with onion puree), black garlic and crispy potato. Pure genius, really!
Those are just a few of his small plate offerings and I’ve tried them all. You just can’t go wrong!
The format of Chef Jackson’s menu: Garden & Grains (small plates great for sharing), Meat and Fish which includes in house made sausage, Larger Plates (great if your not too stuffed from tasting all the smaller plates), and Dessert. On dessert, I absolutely have to mention the Beet Cremeux with espresso, elderflower, cocoa nib and pistachios. It’s not intuitive and your instinct may be screaming “no way am I ordering beets for dessert,” ignore it, trust me! Panna cotta “ish” in texture, perfectly balanced with a touch of bitter coffee essence, and salty crunchy pistachios that cut through the richness.
What are you walking into? You may ask yourself that when you stumble across it. The exterior is underwhelming to say the least. Once you get over the smell of fried seafood coming from next door, (It’s actually good I’ll explore that another time, and step inside you will be welcomed by the unpretentious relaxed atmosphere. You’re about to have a tuxedo experience in an anti-snobbery environment.
