One of my favorite summer dishes to prepare is the classic tomato pie! It takes just a few uncomplicated steps to prepare and it is a delightful southern staple. Enjoy for breakfast, lunch or dinner! I used fresh tomatoes, corn and vidalia onions from our local farmers market. You can really taste the difference!
3 large table tomatoes
2 ears of corn
1 vidalia onion
4 cloves garlic minced, about 3 Tbs.
1 container Palmetto pimento cheese with jalapeños
1/2 cup sharp cheddar cheese, grated
3/4 cup Duke’s mayonaise
2 Tbs. Franks hot sauce (you can adjust to taste or omit)
3 Tbs. fresh parsley, finely chopped
3 Tbs. fresh basil, finely chopped
1 Tbs. unsalted butter
Salt and Pepper to taste
1 9″ Deep dish frozen pie crust
